Meatball Parm Skewers

  • 1 lb. ground beef
  • 1/2 c. bread crumbs
  • 1 Egg, lightly beaten
  • 2 tbsp. chopped parsley
  • 4 garlic cloves (divided)
  • 1/2 c. finely grated Parmesan, divided
  • kosher salt
  • Freshly ground black pepper
  • 5-6 mozzarella slices, cut into small squares
  • Fresh basil leaves, for serving

  1. Mince two cloves of garlic and thinly slice the remaining to cloves.
  2. In a large bowl, ground beef, bread crumbs, egg, parsley, minced garlic and ¼ cup Parmesan. Season with salt and pepper. Mix until just combined. Roll into golf-size balls.
  3. Heat olive oil in a large skillet over medium-high heat. Add the meatballs and cook to brown on all sides. When the meatballs have developed a nice crust, remove them from the skillet and wipe the skillet clean. Return skillet to stovetop over medium heat. Pour marinara into the skillet. Stir in thinly sliced garlic and remaining Parmesan, bring sauce to simmer then add the meatballs back to the pan. Spoon sauce over the meatballs. Cover the pan with a lid and simmer meatballs for another 10-12 minutes, or until cooked through.
  4. Top each meatball with mozzarella. Cover pan with lid and cook until the cheese is melted. Turn off heat. Top each meatball with a whole basil leave, folded, and pierce with a toothpick to serve.

Thanksgiving Leftovers Recipe

Did you stuff yourself yesterday?

Are you ready for round two?

What to do…What to do with those Thanksgiving leftovers?

I know!

Bacon Stuffing Bites
  • 2 cups stuffing
  • 8 strips bacon (cut in half)

  • Preheat oven to 375ºF.
  • Scoop 1 ounce portions of stuffing and roll into a ball, about 16 balls.  Wrap a piece of bacon around each stuffing ball and place on a parchment-lined baking sheet, seam side down. Place in oven and bake for 30 minutes, turning the stuffing bites over halfway through, so that the bacon is fully cooked.
  • Remove from oven and serve warm.
  • Tip you can dip them in leftover gravy and/or cranberry sauce. I also shred some of the leftover turkey and mix it in with the stuffing balls

Here are some more ideas! Just sandwich it!

I Love My City Las Vegas

I haven’t been cooking as much the last few months! Instead I have indulged in what the city of Las Vegas has had to offer! WHICH IS A LOT! You can get any and everything at anytime!

I had the pleasure of eating at the new Gordon Ramsey Fish and Chips!

If you visiting Vegas soon I def recommend for lunch! It is very small on the inside, but there is plenty of seating outdoors! Plus, they push the food out, so the turnover of tables is fast!

    Pull Apart Pumpkin Bread

3/4 cup pumpkin puree (not pumpkin pie mix)

    1/2 cup granulated sugar, divided

    1 teaspoon vanilla extract

    1 teaspoon pumpkin pie spice

    1 large egg

1 can (8 count) Pillsbury Grands Biscuits (homestyle or buttermilk, not flaky)

    1 teaspoon cinnamon

    1/2 cup powdered sugar

    1 teaspoon cinnamon

3 tablespoons heavy whipping cream or milk

Preheat oven to 350°F. Spray an 8×4 or 9×5 loaf pan with nonstick cooking spray (use the kind with flour for best results).

Stir together the pumpkin puree, 1/4 cup granulated sugar, vanilla, pumpkin pie spice, and egg. Set aside.

Open the can of biscuits and slice each in half horizontally. Stir together remaining 1/4 cup granulated sugar and 1 teaspoon cinnamon in a small bowl. Coat each slice of raw biscuit dough with the cinnamon sugar mixture.

Lay one slice of dough flat. Spread some pumpkin mixture on top, then place another biscuit piece on top. Add more pumpkin mixture and continue stacking, spreading, and layering until you’re out of biscuits and pumpkin. Place carefully into the pan.

Bake for about 18-24 minutes, or until the top is golden and the center is cooked through. Cool before glazing. Note: the center shouldn’t be raw, but will be moist and gooey. If the top starts to brown too fast, cover with foil and reduce oven temperature to 325°F.

To make the glaze: whisk the powdered sugar, cinnamon, and heavy whipping cream until a smooth sauce forms. Drizzle over loaf, pull apart, and serve.

Store loosely covered for up to 2 days.

    Happy Fall!

According to a notice of hearing from the Ontario College of Teachers, Jennifer Elizabeth Green-Johnson, who teaches grades 10 through 12 at at Dunnville Secondary School, has also been accused of calling a student a “bloody pedophile,” and allegedly said another “looked like a frumpy old lady today.”

Upon being offered muffins by a student in exchange for a passing grade, Green-Johnson also allegedly said, “You mean a bribe? I’d be able to shit for a week ‘cause of all that fiber.”

Green-Johnson also allegedly said, “Get that fucking thing out of here” to a student who brought in coffee; told a student, “I have never said this to a student before but fuck you;” and said, “It’s debate, not masturbate” to the class, all within the 2015-2016 school year.

The 10 Commandments of Working Out

    1. Thou Shalt Enjoy Working Out

If the exercise you’re doing isn’t fun or you cringe whenever you think about having to do it, that workout is as good as skipped. Sweating it out shouldn’t feel like a chore, so find workouts that inspire you, that you can’t wait to go to, and that make you feel good about yourself.

    2. Thou Shalt Work Hard

A typical workout is only 30 to 60 minutes out of your day (plus extra time for getting ready and travel), so get the most out of this short time by giving it 100 percent. Push yourself, get your heart rate up, and get sweaty. After an intense workout, you shouldn’t still look cute.

    3. Thou Shalt Do Cardio

Heart-pumping cardio not only keeps your cardiovascular system in tip-top shape, but it’s also essential for building endurance and burning major calories. For overall health, make vigorous cardio a part of your weekly workout schedule for 20 minutes a day, three times a week — up it to 60 minutes a day, five days a week, if you’re trying to lose weight.

    4. Thou Shalt Strength Train

Strengthening your muscles makes them look toned and defined, and for a double bonus, having more muscle means your body is burning more calories. Include strength training sessions three times a week; focus on targeting all the major parts of the body. Bodyweight exercises are great for overall strengthening, but if you want to build muscles faster, you’ll want to use weights. Keep in mind that lifting heavier weights will help you lose weight faster.
