If you have leftover BBQ, this is a great way to use it!
For each quesadilla you will need two flour tortillas
¼ cup of cheddar cheese
1/8 cup Monterrey Jack cheese
½ cup chicken and a couple tablespoons of dice red onion (optional).
Spray a skillet with cooking spray, and spread butter on one side of each tortilla.
Heat skillet on medium-high heat.
Place one tortilla butter side down onto the skillet.
Spread cheese, chicken and onions over the tortilla and place second tortilla butter side up on top.
Once one side is browned, flip over and brown the other side.
Serve with salsa, sour cream or any other condiments.
